Lablabi
TUNISIAN CHICKPEAS SOUP
Lablabi is a popular Tunisian dish. It’s a chickpeas soup served as a breakfast street food during cold days. Originally, Lablabi is a “food of the poor” and became very popular in the late decades. Other than its nutritious value, it is a must eat in winter.
RECIPE
- Rinse the chickpeas and let them soak overnight in 3 liters of water.
- Put the chickpeas with its water in a large sauce pan.
- Add the garlic cloves, 2 tbsp of olive oil and the half lemon and cook for about 1 hour and a half or 2 hours, until the chickpeas are tender.
- Serve the soup in bowls where you individually add the seasonings, bread and egg. Mix and eat.
