The Stuffing

  • In a large bowl, mix the flour, vanilla sugar, baking powder, sesame seeds, and salt altogether.
  • Add the beaten egg.
  • Add the melted butter and mix well.
  • Add the warm water progressively and mix until the dough is well combined.
  • Put the dough in a freezer/food bag and allow to rest for at least 1 hour.
  • Prepare the filling by combining the ground dates with cinnamon and olive oil.
  • Form ropes out of the dates dough.
  • Spread the dough on a clean surface with a pastry roll.
  • Place the date rope on the dough and roll over twice.
  • Remove the remaining dough.
  • Press gently the filled part and cut in small diamonds.
  • Place the makroudh pieces on a parchment paper and repeat the steps with the remaining dough.
  • Bake the makroudh for 20 minutes in a preheated oven at 175°C.
